Ingredients (2–3 servings)

  • 1 ½ cups unsweetened almond milk (or oat milk)

  • 3 tbsp unsweetened cocoa powder
  • 3 tbsp maple syrup (adjust to taste)
  • 1 tsp vanilla extract

  • Toppings: coconut yoghurt, fresh berries, shaved dark chocolate, nuts

Step-by-step method

  • Add milk, cocoa powder, maple syrup, vanilla and salt to blender. Blend 20–30 seconds until smooth.
  • Sprinkle psyllium and chia seeds over liquid surface. Blend again for 5 seconds only.
  • Immediately pour into small ramekins or glasses (mixture thickens quickly).
  • Refrigerate 1–2 hours until pudding consistency.
  • Serve cold with toppings. If too thick, whisk in splash of milk before serving.
