Ingredients (1 standard loaf tin, ~900 g)

Dry ingredients

  • 2 cups gluten-free flour blend (rice + tapioca/potato starch blend)
  • ½ cup fine brown rice flour or sorghum flour
  • ¼ cup ORGANIC INDIA Organic Whole Husk Psyllium
  • 2 tsp instant yeast
  • 2 tsp baking powder (gluten-free)
  • 1 ¼ tsp fine sea salt
  • 1–2 tsp coconut sugar

Wet ingredients

  • 2 cups warm water (not hot, ~40°C)
  • 3 tbsp olive oil or melted coconut oil
  • 1 tsp apple cider vinegar

Step-by-step method

  1. Preheat oven to 200°C (fan 180°C). Grease and line a standard loaf tin (20 x 10 cm) with baking paper overhanging the sides.
  2. In a large bowl, whisk together all dry ingredients until evenly combined and no psyllium clumps remain.
  3. In a jug, combine warm water, oil and vinegar. Pour wet mixture into dry ingredients.
  4. Mix vigorously with a wooden spoon or dough whisk for 2–3 minutes until smooth, thick batter forms (like muffin batter, not traditional dough).
  5. Transfer to prepared tin, smooth top with wet spatula, and lightly score centre line with wet finger.
  6. Cover loosely with greased cling film and prove in warm spot 40–60 minutes until doubled and puffy.
  7. Bake 45–55 minutes until deep golden and hollow-sounding when tapped. Tent with foil if browning too quickly.
  8. Cool in tin 15 minutes, then lift onto rack to cool completely (4+ hours) before slicing.
